Healthy Nutritious Southern Fried Cabbage

Recently I started having fried cabbage for dinner after learning of its health benefits. For years I had avoided preparing it thinking it was too complicated. Boy was I wrong! It wasn’t only crazy easy, but so delicious! My husband Dale even enjoyed it, and now asks for it! And just to let you know, my fried cabbage is actually sautéed cabbage, cooked in olive oil. Before I give you the ingredients and instructions, I want to give you the low-down on just how healthy cabbage is.

I got most of my my information from WebMD. Cabbage may be classified as a super food. It is packed with healthy nutrients and antioxidants. It contains vitaminc C, K, and chemicals called phytonutrients, which are a cell protecting force, protecting our tissues from swelling, and cancer. Cabbage contains one gram of fiber per every ten calories, which makes it very filling, and good for our digestion. Its juices also help stomach ulcers heal. It is very affordable, one of the cheapest vegetables except for potatoes. However, it has many more nutrients than potatoes. It is an all around great vegetable.

I love southern fried cabbage, and it has just four ingredients:

  • 1/2 head chopped Cabbage
  • 1/2 half chopped onion
  • 1 tsp salt
  • Three minced garlic cloves (optional)
  • Three tablespoons olive oil

I use a 12 inch non-stick dutch oven. Sauté the onions and garlic in 1 tablespoon of olive oil for three minutes on medium high heat. Transfer to a small bowl. Add 1 tablespoon Olive to pan. Heat one to two minutes until olive oil is sizzling. Add chopped cabbage. Stir one minute, then cover and cook stirring occasionally for about 3 minutes. Cabbage will be slightly brown on the bottom. Uncover, continue stirring, and cook on Medium high heat until cabbage is slightly crisp, about four minutes longer. Cooking time may vary depending on you stove top burners. Remove from heat, add onion and garlic, and drizzle with 1 tbsp olive oil, and stir. Transfer to a serving bowl and enjoy!

Caution: stove tops may have varying temperatures. If medium high seems too hot just turn down to medium.
